Ingredients:
Butter flavored cooking spray
2 eggs
½ cup coconut milk
3 tbsp. honey
1 tsp vanilla
¼ cup + 1 tbsp. fresh lime juice, divided
1 tbsp. + 1 tsp lime zest, divided
2 ¼ cup almond flour, sifted
1 tsp baking soda
½ cup coconut, unsweetened & shredded
½ cup powdered Stevia

Directions:

  1. Place the rack in the cooking pot. Spray an 8-inch baking pan with cooking spray.
  2. In a large bowl, beat eggs, milk, honey, vanilla, ¼ cup lime juice and tablespoon zest until thick and frothy, about 6-8 minutes.
  3. Fold in flour, baking soda, and coconut just until combined. Pour into prepared pan.
  4. Place the cake on the rack and add the tender-crisp lid. Set to bake on 350°F or 175°C. Bake 15-20 minutes or until cake passes the toothpick test.
  5. Let cool in the pan for 10 minutes, then invert onto a serving plate.
  6. In a small bowl, whisk together powdered sugar, remaining tablespoon lime juice, and remaining teaspoon lime zest. Drizzle over the top of cooled cake. Serve.
