Butter flavored cooking spray
16 oz. cream cheese, fat free, soft
½ cup + 1 tbsp. Stevia, divided
3 eggs
1 tsp vanilla, divided
½ tsp fresh lemon juice, divided
½ cup mini chocolate chips
1 cup sour cream, fat free


  1. Spray an 8-inch baking pan with cooking spray.
  2. In a large bowl, beat cream cheese and ½ cup Stevia until smooth.
  3. Beat in eggs, one at a time, beat well after each addition.
  4. Add ½ teaspoon vanilla, and ¼ teaspoon lemon juice and stir until combined. Stir in chocolate chips and spoon into prepared pan.
  5. Place the pan in the cooking pot and add the tender-crisp lid. Set to bake on 325°F or 165°C. Bake 40 minutes, or until top starts to brown.
  6. In a small bowl, combine sour cream, remaining Stevia, vanilla, and lemon juice, mix well. Spread over top of cheesecake and bake another 10 minutes.
  7. Transfer to a wire rack to cool. Cover with plastic wrap and refrigerate at least 4 hours before serving.
