Butter flavored cooking spray
3 eggs
1 cup almond flour, sifted
1/3 cup Stevia
1 tsp baking powder
1 tsp apple pie spice
¼ cup coconut oil, melted
½ cup + 1 tbsp. heavy cream
1 cup carrots, grated
½ cup walnuts, chopped
4 oz. cream cheese, soft
¼ cup butter, soft
½ tsp vanilla
½ – 1 cup powdered Stevia


  1. Lightly spray a 6×3-inch cake pan with cooking spray.
  2. In a large bowl, beat eggs, flour, Stevia, baking powder, apple pie spice, oil, and ½ cup cream until fluffy.
  3. Fold in carrots and nuts and pour into prepared pan.
  4. Place in cooking pot and add tender-crisp lid. Set to bake on 350 °F or 175°C. Bake 30-35 minutes or until cake passes the toothpick test. Transfer to wire rack and let cool 10 minutes in pan, then invert onto serving plate.
  5. In a large bowl, beat cream cheese, butter, and remaining cream until smooth and creamy.
  6. Stir in vanilla and enough powdered Stevia until frosting is thick enough to spread. Cut cake in half horizontally and spread with 1/3 of the frosting in the middle, then frost outside. Serve.
